We are having friends over today for the Australia Day holiday and there’ll be a few kids so I whipped up these biscuits. They are quick and easy and the result is pretty cute. If you don’t mind that they have crooked eyes, then get the kids involved in the decorating.

To put these together, you’ll need:
Arrowroot biscuits (or other oval shaped plain sweet biscuits)
Basic icing (1/2 C icing sugar, 1 tsp soft butter, water – about 1 tbsp)
Marshmallows
Chocolate coated peanuts (or sultanas)
Black food colouring (I used Americolor Super Black Gel Paste)

To make the icing, sift the icing sugar into a bowl. Add the butter and mix it in. Add the water a little at a time (add a teaspoon at first, then 1/2tsp at a time) mixing until it’s thick, but spreads and smoothes as it rests. Add one drop of colouring, to make the icing grey.

Cut the marshmallows in half to make 2 circles. I also shaved the back off the chocolate peanuts with a knife to get them to sit flat.

Spread about a teaspoon of the icing onto each biscuit and smooth out with a spatula or flat edged butter knife. Put a marshmallow piece on each side for the ears and a chocolate peanut in the middle for the nose. I put the ears slightly above centre and the nose towards the bottom.

To make the eyes, I put a drop of food colouring onto a spoon and then dipped the end of a takeaway chopstick into the colouring. Make a dot for each eye. For the smiles, I used a toohpick dipped in the colouring to carefully draw a little mouth.

Leave them to let the icing set and you’re done!
