Vegetable and Noodle Slice

Vegetable Noodle Slice

This is a different take on Zucchini Slice and makes a nice change from the norm. With the noodles added, it’s a meal in one! Easy to make and great for kids and baby led weaning. The addition of the oyster sauce seems a bit odd, but I think it works. You can use any veggies you have.

Vegetable and Noodle Slice
2 cups cooked noodles, rice or pasta
2 medium zucchini, grated
1 medium carrot, grated
1 cup corn kernels
1/2 onion, finely diced
1 cup self-raising flour (or 1 cup plain flour & 2 tsp baking powder)
3/4 cup grated cheese (such as tasty or mozzarella)
4 eggs
1/3 cup milk
1/4 cup vegetable oil
1/4 cup oyster sauce

Preheat oven to 180°C (360°F). Grease a 20cm x 30cm slice tin. Line base and sides with baking paper, allowing 2cm overhang at long ends.

If using long noodles, chop into short pieces.

Squeeze excess liquid from grated zucchini and carrot. Combine noodles, zucchini, carrot, corn, onion, flour and cheese in a bowl.

Place eggs, milk, oil and oyster sauce in a jug. Whisk to combine. Stir through noodle mixture. Spread mixture into prepared pan. Bake for about 40 minutes or until golden and just set.

Stand for 20 minutes to set. Serve

    what flours can you substitute with? ie instead fo using white flour..use quinoa? which will taste good? cheers

      The flour is used to bind it together, so I don’t see why you couldn’t use other flours, but I honestly haven’t tried. If you do use an alternative flour, please let me know how it goes!

    my we man is dairy free, would this work without the dairy/cheese?

      You could definitely leave out the cheese. The milk I would substitute with a syou/rice/almond milk or water. Also take a look at my recipe for zucchini slice which is similar. That is also fine without the cheese and dairy-free spread or oil can be substituted for the butter. https://www.thingsforboys.com/2011/11/zucchini-slice.html

My dress for this years @sew_melbourne Garden Part My dress for this years @sew_melbourne Garden Party was the Lucca Dress from @schultzapparel. I adore the 18th Century vibe! After toiling my measured size, I ended up going down 2 sizes and after a few minor tweaks I make to most patterns (shorten and move forward the shoulder and realign the side seams) it was good to go. I was planning to finish the front with eyelets but ended up hand sewing in hook and eye tape. I love the clean look! When trying it on I wanted a little more oomph in the hips so I added some tulle hip pads to the sides. I added in seam pockets too because...pockets! The fabric is from deep stash and originally purchased at the Philips Shirt Factory sale in the city maybe 10 years ago?! It was a dream to sew with! I used about 5m because it was only 90cm wide. I'm loving the result and hopefully the weather plays nice and I get another chance to wear it before it turns cold. My grandma always grew borage and would put it in My grandma always grew borage and would put it in salads. Today Ted and I built a step to make getting up to Today Ted and I built a step to make getting up to front garden a bit easier. Used scraps of timber from the old retaining wall. He wasn't a fan of the circular saw but loved doing the drilling and screwing. Worked out just as I hoped! I don't have a builders square, but turns out a quilting ruler makes an excellent substitute.
